Happy New Year! 2023


Happy New Year my friends!

I've written my New Year goals on
bestdayblogger.com if you like to have a look. I wanted to take this opportunity on this blog post to reflect on the past year and mention how grateful I am to all my online friends and subscribers like you. Thank you so much for being there for me this past year. It has been the hardest year of my life with my cancer treatments, lymphedema diagnosis and arthritis pains. It's a challenge everyday but I am learning to work with all my symptoms and I am taking it one day at a time. 

Thank you all for your lovely comments and support. It means so much to me. I look forward to this year. I look forward to making changes and trying new things. I can't wait to make new content for my Youtube Channel and also make more art and share it with you all.

 Thank you for your support with my poetry book last year.

 I look forward to writing a new book in 2023. 

So you see I couldn't of done it without you,

I truly thank you and I appreciate each and everyone of you!

I look forward to writing more blog posts on this blog. I enjoy writing and showcasing my photos with you all.

Take good care of your selves. self care is so important. Do things that bring you joy. Light those lights, put music on, have a cozy bath and tea. Vlogmas Week One 🎄 Advent Calendars and Baking




Hello Winter! Happy December everyone!


What do you enjoy doing in the winter? 

Here in PEI they say the worst months are January, February and March. 

I’m not worried…okay maybe I am. They sell snowshoes at the local Kent stores! That doesn’t worry me at all! Tomorrow we are expecting a snowstorm. About 20cm of snow and 80 kilometre winds. The wind on this island scares me like crazy. Anyhow, I hope you have a look at my first week vlogmas. I am currently filming part 2. I hope you like it and subscribe to my channel. It brings me so much joy and happiness.

Pumpkin Spice Bread Recipe

 



Set oven to 350F. Prepare two bread pans with parchment paper.

Ingredients

3 1/2 Cups of Flour

2 tsp baking soda

2 tsp pumpkin spice powder

1tsp Cinnamon

1tsp salt

2 Cups Sugar

1 Cup Vegetable oil

2 Eggs

2 Cups Fresh Roasted Pumpkin ( I roasted my pumpkin and pureed it.)

Instructions

Mix the flour, baking soda, salt, pumpkin spice and cinnamon spice in one bowl.

In another bowl mix sugar, eggs, pumpkin puree and oil. Add the dry ingredients to the wet ingredients and mix with a spatula.

Pore evenly into the bread bans and bake in preheated oven 350F for 1 hour and 20 min or until toothpick comes out clean from the bread.

Pumpkin Oat Pecan Muffins RECIPE




 Set oven to 350F

Cook time 25 min

Ingredients

1/2 Cup Plain Oats

1 Cup Flour

1 Cup pumpkin puree

1/3 Cup coconut oil

1/2 Cup maple Syrup

1 tsp pumpkin pie spice

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 egg

1/2 cup chopped pecans

Instructions

Set oven to 350F.

Set your muffin tin and muffin papers.

Spray the muffin papers with baking spray.

Mix all wet ingredients.

Mix all dry ingredients.

Add the dry ingredients to the wet and mix well.

Add the nuts. Mix.

If the recipe is too think add 1/4 cup milk.

Scoop muffin mix in the muffin tin and bake.

Apple Cinnamon Walnut Muffins RECIPE

 


Set Oven 350F

Makes 12 Muffins.

Place muffin papers in the muffin tin and spray them with non stick baking spray.

Here are the ingredients:

1 Cup Flour

1/2 Cup plain Oats

1/3 cup of brown sugar

1 tbs baking powder

1/2 tsp salt

1/2 tsp baking soda

1/2 cup apple juice

1 cup chopped up apple

1 egg

1/3 cup of vegetable oil

1/2 cup chopped walnuts

1/2 tsp cinnamon (mix this with the apples)

1/2 tsp cinnamon for the muffin mix


Instructions

Set oven to 350F

Set papers in muffin tray

Spray muffin papers with non-stick baking spray

Mix all the wet ingredients

Mix all the dry ingredients

Mix the wet ingredients with the dry ingredients and use a spatula.

Then add the apples and walnuts and mix.

If the recipe is too think add 1/4 cup of milk.

Spoon the mix in the muffin tray.

Bake for 30 min in a 350F oven.

Makes 12 muffins.
